This dish was one of the original creations from the fertile imagination of Ronald Cheng, founder of Chinatown, and it helped to vault Chinatown into the pantheon of Austin restaurants back in the 1980’s.
Chinatown revolutionized Austin’s understanding of Chinese cuisine and it continues to do so. Despite his success, Ronald never stops evolving and searching for that next great taste or flavor combination.
I recent revisited this dish and it still amazes me with its searing yet perfectly nuanced flavors. If you haven’t been to Chinatown in a while, try this dish or any of the house specials. You will be rewarded.
