Rob’s Take on the Piadas at The Pizza Cave

When we first recently wrote about the introduction of Piadas to the menu of the mostly pizza and pasta centric The Pizza Cave on Highway 290 in Dripping Springs, I promised to let our readers know my first take on this Italian classic.

Well, we tried them the other night with some friends and they were delicious. Joe Cave and his team have hit a home run here. The Piadas, which resemble the Greek gyro, were fulsome and loaded with flavor. I tried the Italian version which was stuffed with salami, cheese, lettuce, tomato, and other veggies.

We also tried Joe’s new slow cooked dry rubbed pork Piada, which was moist and had terrific mouth feel. This same pork will also anchor The Cave’s stromboli.

I like The Pizza Cave’s innovation and the Piadas are another step along that creative path. So on your next visit to The Pizza Cave, load your plate with these tasty new creations … and be sure to enjoy the gorgeous views of the Hill Country!
