Hard to believe it’s been 20 years since the first Rudy’s Country Store and Bar-B-Q on Research opened its doors. Three friends from the insurance business, including Ken Schiller and our guest for today Mitch Ellengold, were behind the initial collaboration with Phil Romano and the acquisition of the greater Austin territory.

The rest, as they say, truly is history. Rudy’s, home to what is in my opinion the best Moist brisket in Texas, launched in 1994. Mitch is the ambassador of quality control at both Rudy’s and Mighty Fine Burgers (also owned by the same group) and he is also the guy generally responsible for sending folks home with big smiles on their faces. Mitch is also well known at area radio stations as the guy who brings the BBQ on Fridays.

He’s a good friend, a smart operator, and has made a significant contribution to the Austin food scene. He’s an integral part of what makes Rudy’s and Mighty Fine work so well, and he’s also a music fan, having seen Elton John live 45 times!
