Ever wonder what goes on behind the scenes of a hospital food operation? Well, this week’s guest, chef Joe Piefer of Arise Medical Center on Bee Caves Road can shed some light on that.
I’ve never been a fan of hospital food: everything always seems to have a green or dull gray hue to it. But during a knee replacement surgery two and a half years ago at the then Austin Surgical Center (now Arise) my first meal coming out of anesthesia changed everything. Chef Piefer made me a turkey melt that was fresh and tasty, and most importantly, hot! The rest of my stay was one great meal after another.
And so for my recent hip replacement I went back to the smallish 23-bed hospital on Bee Caves Rd and once again Chef Piefer bowled me over. Wanna know how he does it? Listen in.
