Does the above picture intrigue you? If you like Pecorino Parmesan cheese tossed with fresh al dente spaghetti and ground black pepper with (of course) butter, then you will love this classic Roman-style offering.

Juniper at 2400 East Caesar Chavez totally gets this dish – as they do with so many other iconic Italian offerings – and we were there to confirm that the other night. The combination of ingredients in this simple dish was flawless and taste was lovely. This is a spoons-and-forks affair, and tossing the pasta and cheese is half the fun. And the best part is that first bite flavor rush after you’ve done your tossing. Ever better, this is a Cacio e Pepe where those flavors linger on the palate.

Chef Nic Yanes has this one nailed down. I tip my critic’s hat to him, along with offering a congratulatory note on his new baby. (Man is that kid going to have fun growing up!)
