How Two Techies Met and Started Poke Austin

Trent Schneiter was working in the financial services field when by chance he met a fellow techie named Jennifer from San Francisco. They gradually struck up a friendship and then a relationship. She first came to Austin for a meeting and they dined at Fukumoto.

The relationship grew stronger, even though they had some distance between them. One day Jennifer asked Trent what he would do if he could pick his ideal job. To her surprise, Trent said he would start a restaurant. As it turned out Jennifer was on the same wavelength.

She had family in the Bay area who had a Poke (Hawaiian-style diced raw fish) restaurant. Jennifer and Trent did some research and within the next year the concept for Poke Austin was defined and they had found a location off Brodie adjacent to Mighty Fine Burgers. They opened in The Spring of 2018.

Austin has more than its share of hedge fund types who have decided to forego the world of finance and open restaurants (Buffalina for example). Some would have done better selling annuities. But Trent and Jennifer have opened a very approachable and tasty restaurant. It’s also clear that they get the people part of the restaurant business.
