First Tastes of Meridian 98 at Sonesta Bee Cave

I had a very enjoyable conversation and menu tasting the other night with Meridian 98’s Executive Chef Patrick Newman.

The restaurant, located atop the Sonesta Hotel at The Galleria in Bee Cave boasts a gorgeous Hill Country view and an innovative and appealing menu. Newman, who hails from northern Louisiana, took his training in Charleston, South Carolina. But before that, family cooks (including his grandmother) already had helped him find his passion. And that passion, which is a requisite for all top chefs, is evident in his menu.

We began with a delicious charcuterie platter with locally sourced summer sausage, craft breads, bacon, and a variety of cheeses. Next was one of the three flatbreads on the menu called The Traditional (pictured above). A beautiful melange of spices, pepperoni, mozzarella cheese, and a subtle but compelling herbed tomato sauce. There is also a butternut squash flatbread which I have to try on the next visit.

From there we moved to the antelope sliders on Asiago buns which included candied bacon, brie, horseradish aioli and red onions. I took several home to go and they traveled beautifully!

I am looking forward to trying a full dinner here along with the wines curated by manager Sarah Hayes. Newman, unlike some chefs who can be on the grumpy side, is an engaging and personable pro. I’m sure that will impact the cooks who work for him which can only bode well for the restaurant.
