An Unusual Sight on a Traditional Mexican Menu: Crispy Calamari at Cielo Bistro Mexico

Cielo Bistro Mexico opened recently off Far West in Northwest Hills. The menu, in addition to the deliciously crispy Calamari, holds a number of must try items.

I would have used the word “essentials” but that’s been kicked around far too often on wanna-be food sites. So no need for redundancy.

Here are items I highly recommend on your next visit:

• The Carnitas. Classic, crispy and traditional.
• The Mexican Street Corn. Amazing mouth feel to this irresistible dish.
• The Redfish Ceviche. Beautiful flavors in the coastal Mexican tradition.
• Sopa de Chicharron. This features a Blue Corn masa and pork belly manchego. Wonderful flavor!
• Lechon Asado. This stunningly tender and flavorful roast pork shoulder showcases a bit of the Cuban influence. But Chef Mayes really pulls it off!
• Papas Bravas. Best fries I’ve had in a long time. The Yukon Gold potatoes are the perfect choice.
• Pozole Rojo. This is a Guajillo influenced stew done to perfection.
• The Camarones Asado. This is grilled shrimp in a mesquite honey culanto. Don’t leave without trying this!
