Podcast: Steve Southern

Steve Southern is the subject of this week’s podcast. A Texas-born chef, he trained in Dallas, and cut his spurs at the Hyatt under the tutelage of some real pros. He later opened a restaurant in San Antonio, and then joined Iron Cactus where he refocused and improved the tequilla grille concept. He moved from a chef position in Dallas to exec chef for the entire chain before leaving to concentrate on his catering company which eventually led him to Pflugerville where he took over the space of the former European Bistro, and later PBK.

Steve is, like Jack Gillmore, a master of upscale casual cuisine, and the recently opened Southern’s at PBK on Main Street beautifully reflects his core culinary passions. Enjoy the podcast, and please make it a point to check ouyt Steve’s new restaurant.
