Rolling in Thyme & Dough

Over the past few years, the restaurant scene in Dripping Springs has gradually transitioned from DQ and Sonic to several places that offer up a wide array of tasty and thoughtful offerings. One such establishment is a quaint little owner-operated bistro on 333 W. Highway 290 called Rolling in Thyme and Dough. A recent expansion has added needed space to their charming but somewhat crowded interior!

Thyme and Dough’s sophisticated menu offerings flies in the face of the more rural stereotypes commonly held about Dripping. They are predominantly a breakfast and lunch spot, and every menu item has it’s own unique design and appeal. The Breakfast Meat Croissant is an example: the croissant is housemade, and the farm produced eggs along with the fresh breakfast meats, pesto and cheese (including turkey bacon and chicken sausage) make for one of the more delectable breakfast items on city menus. Another recommendation is the Smokey Chipotle Breakfast Sandwich which includes eggs, turkey bacon, cheese and just the right amount of chipotle on a freshly made and delicious Panini.

The lunchtime sandwich menu along with some special entrees is where Thyme and Dough really elevates its game. The primary benefit is that one can choose from an exemplary group of uber-fresh housemade breads including Light Wheat, Seven Grain, Rye, Gluten Free, Panini, Foccacia, and of course Croissant. These breads are the anchors for a great array of painstakingly made sandwiches. One of my favorites is the Turkey in Thyme Sandwich. I prefer the Seven Grain bread with layers of fresh turkey, homemade mayo, and lettuce, tomato, pesto and provolone cheese. Ask them to grill it, and you will be very pleased. And I absolutely love the Meatloaf Sandwich. The menu says it’s a “zesty” meatloaf, and I agree. It’s also unfailingly tender and moist. I like this one on a Panini with the lovely spicy chipotle sauce, lettuce and tomatoes, and Havarti cheese. And it’s ample, as well as being tasty. The Fruit and Chicken Tango Sandwich (Chicken salad) is my wife’s favorite and comes with an assortment of fruit, chicken, pecans, cilantro along with Dijon mustard and homemade mayo on your choice of bread (I like the Rye for this one). The flavors in this sandwich are light, but it still has a requisite zest to it which makes it work.

And their version of the classic Egg Salad sandwich, the Farm to Market Sandwich features fresh, free range eggs mixed with mayo, goat cheese, pesto and lettuce and tomato. This is a large and very fulfilling sandwich which in my opinion, is a deal at $7. Beautifully smooth taste to this one as well. And I recommend the 7-Grain or Panini for this one. And there is an entree special each day. Today, for example, there is a Homemade Rosemary Garlic Whole Wheat Dough Pizza. It’s topped with veggies in season, and it quite simply rocks with texture and taste.

The Soups at Thyme and Dough are often paired with the sandwiches but they are ample and tasty enough to stand on their own. One of my favorites is the Baked Sweet Potato and Pear which is a puree full of intoxicating flavors along with a substantial texture. The Creamy Zucchini is another strong recommendation. As can be the case in lesser versions of this soup, the taste of the zucchini can get lost in the cream. But not at Thyme and Dough. The flavors and textures are spot-on. On the meatier side, try the Hearty Pork and Vegetable. As my sainted gramma used to say, “This’ll stick to yer ribs laddie.”

Thyme and Dough is worth a visit to Dripping, even if you don’t happen live around this throbbing metropolis (lol).
