Fennel Crusted Ahi

Sashimi grade Ahi Tuna loin encrusted in ground fennel seed then pan seared, served atop a salad of shredded romaine, basil, and pear then drizzled with a honey balsamic vinaigrette

Poached Sea Bass

Japanese Sea Bass poached in a sweet basil broth and set over ricotta gnocchi then garnished with steamed asparagus and roasted red bell peppers

Baked Opah

Baked Hawaiian Opah topped with goat cheese and spinach then served atop parmesan risotto and finished in a red wine raspberry reduction
