The Pizza Cave

We had such great response to our recent Pizza Wars Parts 1 and 2 we’re going to drill a bit deeper into some of the restaurants.
Let’s begin with The Pizza Cave in Dripping Springs.
Owner Joe Cave, unlike most Austinites who own Italian restaurants, is a native Texan. He went to San Angelo State, worked at a restaurant there, and literally got the calling to cook.
He married a girl from New Jersey, so he got to work on the accent when he moved there (he worked for a tech company in Princeton).
But the cooking thing was firmly entrenched in him and they moved back to Dripping Spring (where his grandparents had substantial acreage) and started doing pizzas and pastas.
I had disparaged their pasta in an earlier piece but I discovered that when I had dined there before, Joe’s recipes were not being strictly followed by the staff. The Penne with Vodka Sauce I tried a few weeks ago was delicious. Ditto for the Baked Zitti.
The pizzas at the Cave are first rate as we indicated in Pizza Wars.
Joe is known and appreciated by virtually all his regular customers. The reason is obvious. He loves what he’s doing. His wife makes all the desserts and the couple bake their own rolls and subs (for grinders).
So make sure to pay a visit to The Pizza Cave at 290 W and 12 in “downtown” Dripping Springs.
