Cho Sushi Thrives in Lakeway and Steiner Ranch

John Cho did not aspire to run a sushi bar or Japanese restaurant. His brother David was the cook in the family (and a damned fine one at that all the way back to Midori Sushi). John headed to New York to make his mark in the tech/finance world while David remained in Austin.

But as all things in life seem to go, plans don’t always work out. The financial disaster of 2008 wreaked havoc on John’s firm and he found himself back in Austin with brother David. Soon, another and then several restaurants were in the works. They decided to move into the space vacated by Mizu in Lakeway and opened another location off Quinlan Road in Steiner Ranch. And thus was born Cho Sushi.

Cho Sushi is traditional with contemporary fusion Japanese ingredients. No outside influences are permitted. They both learned the art of Japanese cuisine from their stepfather and the results are obvious. Love their maki, especially the engaging “Hulk Roll.” And the sashimi is pristine. They even have their own Golden Ale aptly titled “Cho-Sen”.

While David still overseas the Cho cooking operations, both stores have strong master chefs. Daily specials are common. This has allowed David to dabble with Japanese trailer fare around the city. John remains the rock around which the entire enterprise is anchored. And the story is unfolding nicely as they are developing a fiercely loyal customer base (just the thing small restaurants need too flourish). I wish them both luck because when it comes to Lakeway and Steiner Ranch, they are the story for Japanese cuisine!
